Winemaker’s Comments
Selected from the best of Saxenburg, this wine is very complex and well balanced, spicy and a long finish.

Vinification Details
Hand picked grapes from 2 vineyards fermented with Shiraz-friendly yeast to express maximum cultivar and vintage character. 28 Days skin contact was allowed and malolactic fermentation with bâtonnage in new French and American oak barrels where it remained for 3 months without SO2. The wine was then racked, SO2 added and matured a further 21 months in the same barrels without racking.

June 2005 without fining and only a coarse filtration from selected barrels.

85% Shiraz + 8.5% Cab. Sauvignon + 6.5% Merlot.

North to west slope.
Type of Soil
Decomposed granite, gravel, medium soil for low natural production on the Shiraz and heavy fertile soil for the Cabernet Sauvignon and Merlot.

13 years.
Viticulture Practice
Old and new clones trellised, no irrigation, Summer pruning for the best fruit selection and low production.
Yield per Hectare
20 to 28hl.
